On weekends, my heaviest riding days, it's hard to eat enough to match all the calories I'm burning. Before this morning's ride I had a tall stack of pancakes, yogurt and some leftover refried beans. For lunch I had quesadillas. For second lunch I had veggie burgers with loads of cheese, veggie-mayo and avocado. For dinner I had mac & cheese. And for bedtime snack, a quick pb&j. I feel very much like The Very Hungry Caterpillar: "but he was still hungry."
