During Lauren's most recent trip out of town I learned that Thai iced tea isn't made with coconut milk. No, not at all. In fact, it's made with sweetened condensed milk. One uses coconut milk to make a faintly sweet concoction that looks every bit like rotten curdled cow's milk. In my first version, I couldn't really mix in the coconut milk so I was getting big chunks of it stuck in my teeth while I convinced myself this was pretty much just as good as the stuff you get in the restaurant.
Another thing I learned while Lauren was out of town is that though one may indeed make Thai iced tea with sweetened condensed milk, I can not. The tan sludge was sweeter than age-ripened coke.
